The Keto RN Pumpkin Pie Pudding

Ingredients:

1 Tablespoon Powdered Swerve

1teaspoon Pumpkin Pie Spice

1/4 teaspoon Xanthan Gum

1 Cup Heavy Cream

1 teaspoon Vanilla

1/2 Cup Full Fat Coconut Milk

2 Tablespoons Pumpkin

3 egg whites

Instructions:

In a mixing bowl, combine Swerve, pumpkin pie spice and Xanthan gum.

Add vanilla, cream, coconut milk, pumpkin and egg whites.

Beat with a hand mixer for 3 minutes on high.

Pour mixture into a saucepan and over medium-high heat, stir constantly for 3 minutes.

Pour pudding into individual dessert bowls; cool to room temperature for 15-20 minutes.

Refrigerate pudding for a few hours or overnight.

Garnish with whipped cream and pumpkin pie spice.

Enjoy!
