Low Carb Peanut Butter Cup Bars
Ingredients:
For the base:
1 1/2 cups Creamy Peanut Butter, no sugar added
1 1/4 cup coconut flour
1/4 cup keto-friendly powdered sugar (I used swerve)
A pinch of kosher salt.
1 T vanilla extract
1 Tablespoon coconut oil, melted.
For the topping:
1-9 Oz bag if keto-friendly chocolate chips (I used Lillys milk chocolate)
1 teaspoon Coconut oil
1 tablespoon Coarse sea salt flakes, for garnish.
Instructions:
Prepare a pan:
Line and 8 x 8“ square baking pan with parchment paper, leaving some overhang for easy removal.
Make the base:
In a large mixing bowl, combine the peanut butter, coconut, flour, sweetener, salt, vanilla and melted coconut oil. Mix until a thick dough forms.
Press the peanut butter mixture evenly into the bottom of the prepared pan.
For the topping:
Melt chocolate and coconut oil in microwave safe bowl for 40 seconds. Remove from microwave, stir well. Return to microwave for another 30 seconds. Remove from microwave and stir until smooth.
Pour the melted chocolate over the peanut butter base and spread it out evenly. Sprinkle sea salt flakes over the chocolate layer.
Place pan in the refrigerator and let it chill for at least 2 to 3 hours. Cut into small squares.
