The Keto RN Maple Pumpkin Cookies

Ingredients:

Cookie Batter

1/4 cup melted butter                                                                

1/3 cup powdered Swerve sweetener                                       

1/2 cup pumpkin puree                                                               

1 large egg                                                                                   

1 teaspoon maple extract (can use vanilla)

1.5 cups almond flour

1.5 cups Lupin Flour (can also use all Almond Flour)

2 teaspoons cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon baking powder

1/4 teaspoon sea salt

Glaze:

1/4 cup softened butter

1/4 cup powdered Swerve

2 Tablespoons heavy whipping cream (or nut milk if dairy free)

1/2 tsp Maple extract

Instructions:

    Preheat over to 350 degrees and line a baking sheet with parchment paper

    In large bowl, mix butter and sweetener until smooth

    Add puree, egg and vanilla and continue mixing

      Add almond flour, cinnamon, nutmeg, baking powder & salt, mix until dough forms. I used my hands to really mix.

    Scoop approximately 12 even size balls of dough onto baking sheet, put in a thumbprint so glaze can sit somewhere.

      Bake for 15 minutes until cooked through and golden

Glaze:

    Combine butter and sweetener in a small bowl and mix well. Add extract and 1 tablespoon of HWC. Stir well. Add more HWC a little at a time to get icing to desired consistency.    After cookies cool for 10-15 minutes, add scoop of glaze on top.
