The Keto RN Maple Pumpkin Streusel Muffins

Ingredients for muffin batter:

2 cups almond flour

2 tablespoons coconut flour

1 tablespoon baking powder

1/4 cup brown sugar, swerve sweetener (or keto sweetener of choice)

2 1/2 teaspoons pumpkin pie spice

1/4 teaspoon salt

1 cup pumpkin purée

3 large eggs

1/2 cup unsweetened almond milk

2 teaspoons maple extract

Pecan crumb topping:

1/3 cup almond flour

1/4 cup brown sugar Swerve

2 tablespoons coconut flour

3 tablespoons crushed pecans.

1 teaspoon cinnamon

3 tablespoons cold butter.

Instructions:

Preheat the oven to 325°

In a small bowl, combine the pecan crumb topping ingredients and mix well with a pastry blender or a fork until butter is incorporated and it resembles pea sized crumbs.

Set crumb topping in refrigerator.

In a medium sized bowl, combine all the muffin ingredients together and mix well.

Line a muffin tin with paper liners.

Fill each liner 3/4 full and sprinkle crumb topping OR

Fill paper liners 1/4 full, add generous spoonful of crumb topping, and then more batter. Sprinkle a little crumb topping to the top of the muffin.

Do this for all 12 muffins.

Bake about 22 minutes or until a toothpick comes out clean.
