The Keto RN Maple Pecan Scones
Ingredients:
1/4 cup Sour Cream
1 egg
2 T Lakanto Maple Flavored Syrup (or any other keto friendly syrup)
2T Golden or Brown sugar substitute (I use swerve)
1 cup almond flour
1/4 cup coconut flour
1 1/2 teaspoons baking powder
1 teaspoon maple extract
1/4 teaspoon salt
1/2 cup chopped toasted pecans (optional)
Instructions:
Preheat oven to 325° and line a rimmed baking sheet with parchment paper.
Whisk together sour cream, egg, sugar-free syrup and swerve in a large bowl. Stir in almond flour, coconut flour, baking powder, maple extract, and salt. Let sit for five minutes. (You can add pecans here if you want them in the scones, or on top later.)
Lightly grease your hands and form though into a large bar and place it on the prepared baking sheet. Flatten it to a 6 inch round disc.
Slice into a wedges with a pizza slicer
Press chopped pecans into the top of the scones.
Bake for 18 to 20 minutes, or until they are browned on top. Place the scones are cooling rack and cool completely before serving.
