The Keto RN White Chocolate Macadamia Nut Cookies with Lupin Flour

Ingredients:

3/4 cup + 2T Lupin Flour (74g)

1/4 teaspoon xanthan gum

1/4 teaspoon salt

1/2 teaspoon baking soda

1/4 cup melted butter

1/3 -1/2 cup brown sugar style keto sweetener.

1/2 teaspoon vanilla

1 large egg

1/4 cup Lily’s white chocolate chips

1/3 cup chopped, macadamia nuts

Instructions:

Preheat oven to 325°

Line a baking sheet with parchment paper

In a medium size mixing bowl combine lupin flour, xanthan gum, salt and baking soda. Stir well to combine ingredients.

In a larger mixing bowl mix melted butter, brown sugar sweetener, vanilla and egg.

Mix thoroughly with a hand mixer, until sugar is dissolved.

Add dry ingredients to wet ingredients and stir until a dough is formed.

Fold in macadamia nuts and white chocolate chips.

Raw dough into 12 cookies, and place on parchment lined baking sheet.

Bake for 8 to 10 minutes, until edges are golden brown.

Cookies will appear under baked, but will harden with cooling.
