The Keto RN Protein Breakfast Cookie

Ingredients: 12 servings

2 eggs, room temperature

1/2 cup sliced almonds

1/2 cup chopped pecans

1/2 cup keto sweetener

1/3 cup creamy, no sugar, peanut butter

1/3 cup almond flour

1/3 cup, unsweetened, shredded coconut

1/4 cup hemp hearts

1/4 cup coconut flour

1 teaspoon baking powder

1 teaspoon cinnamon

1 teaspoon vanilla

1/4 teaspoon salt

1/4 cup dark chocolate, sugar free, chocolate chips

Instructions:

Preheat oven to 350°F and line a large cookie sheet with parchment paper.

In a large bowl, add all the dry ingredients and mix together.

Stir in the peanut butter, eggs, and vanilla, until a sticky dough forms.

Shape into 12 dough balls.

Bake for 12 to 15 minutes in the oven until cookies are golden brown.

Cool completely and store in an airtight container.
