The Keto RN Cheese Filled Bagel Bites

Ingredients:

2 cups almond flour

1 tablespoon baking powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

Three large eggs, divided

3 cups low-fat, part skim shredded mozzarella

5 tablespoons cream cheese

1/ 4-1/2  cup everything but the bagel seasoning

4 ounces cream cheese, cold and diced

Instructions:

  1. Preheat oven to 425°F. Placed a silicone mat onto a baking sheet.

  2. In a medium bowl, combine the almond flour, baking powder, and spices. Mix well and get all the clumps of flour out.

  3. In a large mixing bowl, combine the mozzarella cheese and cream cheese. Microwave for 1 1/2 minutes. Remove from microwave and stir to combine return to microwave for an additional minute. Mix well.

  4. Add two eggs, and the almond flour mixture to the melted cheese. Combine until all ingredients are well incorporated. If the dough is unworkable, microwave it for 30 seconds to soften and continue mixing.

  5. Roll the dough into 24 even sized balls. Cut the block of cream cheese into 24 cubes.

  6. Crack remaining egg into a small dish and whisk, this will be an egg wash for the dough.

  7. Take each dough ball and gently press your thumb into the center of it to create a large dent. Put a piece of the cream cheese cube inside the pocket and shape the dough around it to seal the cheese into the center.

  8. Brush egg wash over each bagel bite and roll it into the bagel seasoning.

  9. Place the coded bagel bites and a single layer across the baking sheet. Bake for 10 to 12 minutes or until the dough is golden brown and the outside is cooked.
