The Keto RN Lemon Bars

Ingredients:

Crust:

2 1/2 cups almond flour

1/4 cup powdered keto sweetener

1/4 cup melted butter (coconut oil if dairy free)

1 egg, whisked

1 teaspoon vanilla extract.

Lemon filling:

1/3 cup powdered keto sweetener

1/4 cup almond flour

4 large eggs

3/4 cup lemon juice

1-1/2 tablespoon lemon zest

Instructions:

Preheat oven to 350°. Line a square baking dish with parchment paper.

Start with filling, you will pour the filling into the crust as soon as it’s out of the oven.

In a medium bowl, stir together, almond flour and sweetener.

Whisk in the eggs, lemon zest, and lemon juice until smooth. Set aside.

In a medium bowl, combine the almond flour, and sweetener. Mister in melted butter, egg, and vanilla. Mix well until a dough forms. . Press the dough with your hands into the parchment paper lined pan. Bake for about 15 minutes, until golden brown.

Remove the crust from oven, and immediately pour the filling over the crust.

Put back into the oven for 15 to 18 minutes, until filling is set.

Cool completely, then cover and refrigerate for 2 hours before slicing.
