The Keto RN Everybody’s Favorite Sweet Potatoes

Ingredients:

3 Cups Mashed Sweet Potatoes

1/4 cup Keto Sweetener

1/2 Cup Almond Milk

1/2 Cup Melted Butter

2 Eggs, beaten

1 teaspoon Vanilla

Topping:

3/4 Cup Keto Brown Sugar

1/2 Cup Almond Flour

1/3 Cup Almond Milk

1/4 Cup Melted Butter

1 Cup Chopped Pecans

Instructions:

Preheat oven to 425 F

Wash Sweet Potatoes, poke holes with a fork all over potato.

Put on parchment lined baking sheet. Bake until soft (20-30 minutes)

Let potatoes cool, then peel and mash until smooth. (This can be done a day or so ahead of time.)

Mix potatoes and all ingredients (except topping) in a bowl. Combine well.

Put into an 8X8 baking dish.

Combine topping ingredients in a small bowl. Add to the top of the potatoes.

Bake at 350F 30-40 minutes!
