The Keto RN Warm Shrimp and Spinach Salad with Warm Bacon Dressing

Ingredients:

24 Uncooked, tail-on shrimp

1 tablespoon Butter

1 teaspoon Garlic Powder

16Oz. Baby Spinach

3 Hard Boiled Eggs, chopped.

6 slices bacon, cooked and crumbled

For the Dressing:

Drippings from bacon (or bacon grease)

4 Tablespoons Red Wine Vinegar

2T. Olive Oil

1 teaspoon Dijon Mustard

1 Teaspoon Keto Sweetener

Salt and pepper to taste.

Instructions:

Cook bacon in a pan, saving the drippings. Put bacon on paper towel and let cool. Cut into small pieces.

Melt butter in sauté pan. Add shrimp. Sprinkle with Garlic Powder. Cook until pink, turn and continue cooking until pink all the way through.

Pour Bacon drippings into a small saucepan. Turn heat to low. Add Vinegar, Olive Oil, Dijon mustard, Sweetener, salt and pepper. Whisk together well. Keep on low heat while you put salad together.

Put Spinach in a large bowl. Add Eggs and bacon bits.

Pour warm dressing over spinach. Mix thoroughly.

Plate salad onto plates, place 6 pieces of shrimp onto each salad.

Enjoy!
