The Keto RN Loaded Zucchini
The Keto RN Air Fryer Loaded Zucchini
Ingredients:
3 medium zucchini
4 tablespoons sour cream.
3 slices, bacon, cooked and crumbled.
3 green onion, sliced.
3/4 cup cheddar cheese, shredded
1/2 teaspoon smoked paprika
1/2 teaspoon ground black pepper.
Instructions:
Set air fryer temp to 360°.
Cut zucchini in half and remove the seeds using a spoon. Cut the zucchini into 2 inch pieces.
Place zucchini skin side down in the fryer and cook about five minutes. Remove zucchini and set aside.
In a bowl, combine the cheddar cheese, green onion, sour cream, bacon, paprika, and pepper. Scoop an equal amount of the mixture onto each zucchini.
Place zucchini back into fryer basket.
Cook zucchini in the air fryer another 5 minutes,until cheese has melted.
Remove from Air fryer and allow to cool slightly.
Enjoy.
