The Keto RN Spicy Jambalaya
Ingredients:
3/4 pound jumbo shrimp, peeled and deveined
1 large boneless, skinless chicken breast, diced
2 tablespoons of Cajun seasoning (see recipe)
3 T butter
1/4 cup white onion, diced
1 green pepper, seeded and diced
1 orange or yellow bell pepper, seeded and diced
3 Celery stalks, chopped
1 1/2 teaspoons minced garlic
2 Bay leaves
2-(10 ounce) cans of diced tomatoes with green chilies
3 tablespoons Worcestershire sauce
2 cups Cauliflower rice
1 package of Andouille sausage or kielbasa, sliced.
1/2 cup water
Salt and pepper
Green onion to garnish
Directions:
In a large mixing bowl, combined shrimp and chicken. Toss with Cajun seasoning and stir to coat well, set aside.
Heat butter in a Dutch oven over medium heat. Add the onions, bell pepper, celery, garlic, and Bay leaves. Sauté until vegetables are starting to soften.
Add the canned diced tomatoes and green chilies, Worcestershire sauce and stir well.
Add the chicken, shrimp, sausage and water. Cover and increase heat to medium-high.
Simmer until liquid has mostly evaporated.
Add Cauliflower Rice and continue cooking until it is heated throughly. Taste and add salt and pepper as desired. Remove Bay leaves
Serve in bowls, top with green onion.
