The Keto RN Sheet Pan Breakfast

Ingredients:

8 oz. radishes, quartered

8 oz. Brussels sprouts, trimmed and quartered.

6 breakfast sausage links, sliced

4 slices, thick bacon, chopped

1 large shallot, sliced

1 teaspoon garlic powder

Salt and pepper to taste.

2 tablespoons of melted butter.

6 eggs.

Instructions:

Preheat oven to 400°F. Lightly grease a rimmed baking sheet with avocado oil

Place radishes, Brussels sprouts, bacon, shallot and sausage in a large bowl. Add garlic powder, salt and pepper. Mix in melted butter. Toss well and spread mixture onto baking sheet in one even layer.

Bake for 20 minutes until vegetables are nearly tender. Leave oven on; remove baking sheet from oven and create six wells in the vegetables and meat to hold eggs.

Crack eggs into wells; gently return baking sheet to oven. Bake 5-7 minutes more, or until the eggs are set to your liking.
