The Keto RN Balsamic Mushroom Chicken

Ingredients:

6-bone in, skin on, chicken thighs

Salt and pepper to taste

8 ounces sliced mushrooms

1 T brown sugar style keto sweetener

4 T balsamic vinegar

2 T soy sauce or coconut aminos

2 garlic cloves, minced

1/2 teaspoon dried thyme

2 T butter

Instructions:

Season chicken with salt and pepper.

Heat oil in a pan and add chicken once hot.

Cook about 10 minutes each side, to internal temperature of 165 degrees.

While chicken is cooking, in a bowl, mix together vinegar, soy sauce or Coconut Aminos, brown sugar sweetener, garlic and thyme.

Remove fully cooked chicken from pan, set on plate and keep warm.

Add the sauce to the pan and bring to a boil. Add mushrooms and continue cooking until sauce is reduced by about half.

Add in butter and stir until melted.

Add chicken back to pan to warm it. Serve with your favorite low carb vegetable.
