The Keto RN Sausage and Veggie Sheet Pan Dinner
Ingredients:
14 ounces Polska kielbasa sausage
2 small bell peppers, chopped
1 cup broccoli florets
8 cloves garlic, whole
8 Oz. Cremini Mushrooms, sliced
1 bunch radishes, chopped
1 medium zucchini sliced in large chunks
1/2 red onion, sliced (optional)
1/4 cup Olive Oil
1 tsp salt
1 tsp pepper
1 Tablespoon Cajun, Italian, or Taco seasoning (find Taco and Cajun Recipes on my blog under spices)
Preheat oven to 400° F
Serves 4-6
Slice the sausage into 1 inch rounds.
Place on a cookie sheet covered with parchment paper.
Slice all remaining vegetables and garlic cloves into large chunks and mix together in a large bowl.
Add Olive oil, salt, pepper, and seasoning mix to vegetables.
Mixed together well. ( I use my hands).
Add veggies to cookie sheet and combine with sausage.
Bake in oven for 20 minutes, stirring halfway through.
Can serve with cauliflower rice if desired.
Note: you can use any vegetables that you prefer in this recipe. Asparagus, green beans, Brussel sprouts, grape tomatoes, and carrots are all great additions.
