The Keto RN Easy Sausage and Veggie Skillet
Ingredients:
14 ounces Andouille sausage
8 Oz sliced mushrooms
2 small bell peppers, chopped
1 cup broccoli florettes
2 Tablespoons minced garlic
1/2 red onion, sliced
2T Olive oil
1 tsp salt
1 tsp pepper
1 Tablespoon Italian seasoning
Parmesan cheese
Sriracha sauce
Instructions:
After all your vegetables and sausage are chopped, heat olive oil in a large cast-iron skillet over medium high heat.
Add onion and garlic to the pan and sauté until crisp tender, and fragrant.
Add sausage and Italian seasoning to the pan and cook for about four minutes.
Add peppers and broccoli to the pan and cook until they are bright in color. Stirring occasionally.
Cover pan, remove from heat. Let veggies continue to soften.
Serve over Cauliflower rice. You can season with Sriracha sauce or Parmesan Cheese as well.
