The Keto RN Curry Roasted Chicken Thighs

SERVES 4:

Using curry paste is a quick and easy way to add intense flavor to chicken.

Be sure to rub the curry paste under

the skin of the chicken thighs to keep it from sticking or burning.

Ingredients:

1½ tablespoons red curry paste

2 teaspoon lime zest

1 garlic clove, grated

4 (6-ounce) bone-in, skin-on chicken thighs

3/4 teaspoon kosher salt

½ teaspoon black pepper

1 tablespoon Olive oil

1. Preheat oven to 450°F. Combine curry paste, lime zest, and garlic in a bowl.

2. Pat chicken thighs dry with paper towels. Loosen skin by gently pushing fingers between skin and meat (do not detach skin). Rub curry paste mixture evenly under skin of each thigh. Combine salt

and black pepper; sprinkle over chicken.

3. Heat a large ovenproof skillet over medium-high. Add oil. Add chicken, skin side down; cook until skin is browned and crisp, about 8 minutes. Turn thighs, cook another 5 minutes.

Place skillet in oven; bake at 450°F until cooked through, 10 to 12 minutes.
