The Keto RN Texan Style Chili

Ingredients:

1/4 cup avocado oil

2 pounds stew meat

3/4 teaspoon Himalayan salt

1/2 teaspoon black pepper

2 1/2 cups chopped onion

1 tablespoon cumin seeds

1/2 jalapeño, chopped ( more if you like spice)

7 garlic cloves, minced

Two cans of beef broth (30 Oz)

1/4 cup of vinegar

3 tablespoons chili powder

1 tablespoon oregano

1 tablespoon smoked paprika

Optional toppings:

Cilantro

Sour cream

Cheddar cheese

Lime wedges

Instructions:

  1. Heat oil in a large Dutch oven over medium high heat, swirling to coat. Sprinkle beef with salt and pepper. Add to a hot pan; cook 8-10 minutes or until browned. Remove from pan and set aside.

  2. Add 2 1/2 cups onion to pan; sauté five minutes or until lightly browned. Add cumin seeds, jalapeño pepper, and garlic; sauté until fragrant. Add beef broth scraping pan to loosen any browned bits. Return beef to the pan.

  3. Stir in vinegar, chili powder, oregano, and smoked paprika; bring to a boil. Cover, reduce heat, and simmer 1 1/2 hours or until beef is tender, stirring occasionally. Uncover and simmer one hour.

Serve in bowls and top with toppings as desired.
