The Keto RN Greek Chicken Power Bowls

Ingredients:

4 cups cooked cauliflower rice.

2 tablespoons olive oil,

4 boneless skinless chicken breasts, or chicken tenders.

2 tablespoons dried oregano.

1 tablespoon dried basil

1 1/2 teaspoon salt

1/2 teaspoon pepper.

1 English cucumber, sliced and quartered.

1 large shallot, diced.

12 cherry tomatoes, halved

2 tablespoons lemon juice.

1 cup Tzatziki sauce

1/2 cup crumbled feta cheese

1 bunch parsley, chopped

Instructions:

In a large skillet, heat olive oil over medium heat.

Place chicken in pan and sprinkle half of your seasoning over the top cook for about 6 to 8 minutes. Turn chicken and sprinkle with remaining spices. Cook for another 6 to 8 minutes, until chicken is done and golden brown. 

Remove from pan, allow to cook, then slice thinly. 

Cut cucumber, shallot and tomatoes. Mix into a bowl. Add lemon juice, salt and pepper (if desired).

Place cauliflower rice at the bottom of each bowl. 

Add chicken, veggie mixture, and a dollop of Tzatziki sauce. 

Sprinkle with feta cheese and parsley. 

Serve and enjoy.
