The Keto RN Pecan Crusted Cod

Ingredients:

4 to 5 cod fillets

1/3 cup butter, melted

1 cup pecans, finely chopped

1/4 teaspoon Himalayan salt

1/4 teaspoon pepper

Instructions:

  1. Preheat oven to 400° F

  2. Line a rimmed baking sheet with parchment paper.

  3. Dry fish with a paper towel if wet

  4. Melt butter in a shallow bowl

  5. Finally chop or put nuts in a food processor and process until fine. Add salt and pepper. Pour onto a plate.

  6. Dip fish in melted butter

  7. Press fish into nut and spice mixture and put onto baking sheet. Repeat this with all of the fillets.

  8. When all your fish is on the baking sheet, go back and press extra nut mixture into the pieces of fish that are still showing through, making sure the top is covered with the nut mixture.

  9. Bake at 400° for 15 to 20 minutes, until fish flakes easily with a fork.

  10. Enjoy!
