The Keto RN Mediterranean Chicken

Ingredients:

4 Chicken Breasts, flattened slightly

1-1/2 tablespoons Olive Oil

1 teaspoon salt

1/2 teaspoon pepper

1 teaspoon oregano

1 tablespoon garlic powder

1 tablespoon smoked paprika

1 tablespoon lemon zest

Juice of 1/2 lemon

Feta Cheese (optional)

For the salsa:

1/2 cup Italian parsley, chopped fine

1/2 cup walnuts, chopped

1/2 cup Kalamata olives, chopped

1 1/2 teaspoons sumac

2 teaspoons lemon zest

Juice of half a lemon

1/4 cup olive oil

Instructions:

Place chicken breast in medium size bowl, add olive oil, salt, pepper, oregano, garlic powder, smoked paprika, lemon zest and lemon juice to bowl.

Mix well with your hands, making sure to coat all of the chicken with the spices.

Heat avocado oil in a skillet over medium high heat.

Cook chicken about five minutes on each side, until done.

To make olive salsa:

Mix all the ingredients in a bowl and stir well.

After chicken is cooked top with the olive salsa and feta cheese if desired.
