The Keto RN Lemony Garlic Chicken Thighs

Ingredients:

6 bone-in, skin-on chicken thighs

3 Tablespoons Olive oil

1 teaspoon salt

1/2 teaspoon pepper 

1  diced shallot,

2 1/2 tablespoons fresh dill, chopped

5 cloves of garlic, minced.

1 large lemon, zested and juiced.

2 tablespoons Dijon mustard. 

Instructions:

Place chicken in a bowl, add oil, salt and pepper and rub it into chicken. 

Let it rest a minute. 

Add all other ingredients into the bowl, mix well with your hands, making sure you get the skin well coated. 

Place in a baking dish and bake at 425° for 30 minutes. 

Based chicken with the juices in the pan, and bake for another 10 to 15 minutes. 

When you remove it from the oven, squeeze a little more lemon juice over the top of the chicken.
