The Keto RN Easy Greek Chicken Sheet Pan Dinner

Ingredients:

3/4 cup olive oil

1/8 cup lemon juice, fresh if possible

4 cloves minced garlic

2 teaspoon dried oregano

2 teaspoons dried thyme

2 teaspoons Dijon mustard

1 teaspoon salt

1/2 teaspoon black pepper

6 chicken thighs, bone-in, skin on

1 large zucchini, halved lengthwise, and chopped

1 bell pepper, any color, chopped into 2 inch pieces

3/4 large red onion, sliced into pieces

1 pint cherry tomatoes

1/4 cup kalamata olives, pitted

1/2 cup feta cheese crumbles

2 tablespoons chopped fresh parsley

Instructions:

Preheat oven to 425°F.

In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.

Place chicken thighs in a larger bowl and pour 2/3 of the marinade on top, tossing the chicken to coat well. Marinate the chicken for 30 minutes.

While the chicken is marinating, place the zucchini, bell pepper, red onion, and tomatoes onto the baking sheet and drizzle the remaining marinade on top. Toss together to coat vegetables with marinade.

Nestle the marinated chicken thighs between the vegetables on the baking sheet and bake for 30 minutes.

Remove the baking sheet from the oven, add the olives and feta cheese and then put it back into the oven for another 10 to 15 minutes, or until vegetables are soft and the chicken is cooked through.

Sprinkle the cooked chicken and vegetables with parsley before serving.
