The Keto RN Italian Meatloaf Dinner
Ingredients:
2 pounds ground beef
One egg
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 1/2 tablespoons Italian seasoning
4 Roma tomatoes
Olive oil
Arugula leaves
Instructions:
Preheat oven to 350°F. Cover a rimmed baking sheet with parchment paper.
Mix together the ground beef, egg, salt, and Italian seasonings in a large bowl.
Shape the meat into a loaf and place in the middle of the parchment paper. Sprinkle with olive oil and sprinkle with some extra Italian seasoning and fresh ground pepper. Bake for 20 minutes.
Season tomatoes with salt and pepper and placed them around the meatloaf, cut side up. Bake for an additional 15 to 20 minutes or until done.
Cool about 10 minutes before slicing. Serve meatloaf with a spoonful of pesto mayonnaise, arugula greens drizzled with olive oil and find sea salt and a couple of tomato halves.
Pesto mayonnaise:
3/4 cup avocado oil mayonnaise
1 1/2 tablespoons pesto
Combine the mayonnaise and pesto, and a small bowl, stirring well to combine. Serve alongside meatloaf.
Place arugula in a large bowl drizzled with olive oil and sprinkle with salt. Mix well and add to your plate with meatloaf and tomatoes.
