The Keto RN Slow Cooker Butter Chicken (DF/GF/Low Carb)

Ingredients:

1/2 cup chicken stock

1–6 Oz. can tomato paste

2 teaspoons yellow curry powder

1 teaspoon Garam masala

1.5 teaspoons ground turmeric

1 teaspoon salt

1/2 teaspoon black pepper

2 pounds boneless skinless chicken breasts, cut into 1 inch pieces

1/2 onion, diced

4 cloves, garlic, minced

1 tablespoon grated ginger

3/4 cup coconut cream.

3 tablespoons fresh lime juice

2 teaspoons keto, brown sugar sweetener

Cauliflower rice

Instructions:

In a small bowl, whisk together, chicken stock, tomato paste, curry powder, garam masala, turmeric, salt, and pepper. 

Place chicken, onion, garlic and ginger into a 4 quart slow cooker cooker. Stir in chicken stock and spices.

Cover and cook on low heat for four hours, or high heat for two hours. Stir in coconut cream, lime juice and keto sweetener; season with salt and pepper to taste.

Serve immediately with cauliflower rice.
