The Keto RN Balsamic Chicken Tenders

Ingredients:

2 lbs Chicken breast tenders

2 Tablespoons Avocado or Olive Oil

Salt and Pepper

3 Tablespoons fresh Basil, finely chopped

8 Oz. grape tomatoes, halved

8 Oz. Fresh Mozzerella balls (in brine, not oil)

sauce:

1/3 Cup Balsamic Vinegar

1 Tablespoon Powdered Sweetener (Swerve)

2 Tablespoons Olive oil

2 Garlic Cloves, minced

1 teaspoon Italian seasoning

1 Tablespoon Dijon mustard

Instructions :

Preheat over to 400 degrees.

Whisk together sauce ingredients in a bowl, and set aside.

Toss tomatoes, mozzarella and basil in another bowl. Set aside.

Heat oil in a large, oven safe skillet. Season chicken with salt and pepper . Once oil is hot, add chicken to the pan. Cook for 1-2 minutes on each side, until golden brown.

Add balsamic mixture. Use a wooden spoon to scrape up brown bits from the bottom of the pan.

Immediately remove pan from the heat and add tomato, mozzarella mixture over chicken.

Bake uncovered for 18-22 minutes, until chicken is cooked through. Internal temp should be 165F.

Remove from oven and let rest 5 minutes before serving.
