Peanut and Bell Pepper Chicken (GF)

 

The Keto RN Peanut and Bell Pepper Chicken (GF)

Ingredients:

1 1/2 pounds chicken breast tenders

1 teaspoon salt

1/2 teaspoon ground pepper

2 tablespoons butter

2 tablespoons olive oil

2 red bell pepper, seeded and cut into strips

4 cloves minced garlic

3/4 cup chicken stock

1/3 cup creamy peanut butter ( no sugar)

3 tablespoons tamari

3/4 teaspoon red pepper flakes (less if you don’t want any spice)

Sliced green onions

Cauliflower rice, cooked

Directions:

  1. Season chicken with salt and pepper

  2. Heat the butter and olive oil in a large skillet over medium high heat. And chicken and cook for 5 to 10 minutes until browned on the sides.

  3. Reduce the heat to medium low and add the peppers and garlic to the skillet star often for five minutes to keep from burning the garlic.

  4. A separate bowl combine the chicken stock, peanut butter, tamari, and red pepper flakes. Whisk until ingredients are mixed well

  5. Pour the sauce into the skillet. Bring to a boil over medium-high heat, reduce heat to low and simmer, stirring frequently until the sauce has thickened. About five minutes.

  6. Serve over cauliflower rice, garnish with green onion.

  7. Enjoy!
