Lime Coconut Chicken

Ingredients:

2 pounds boneless skinless chicken breast

1 can full fat coconut milk

2 tablespoons olive oil

1/4 cup cilantro

2 cloves garlic, minced

1 tablespoon ginger, minced

2 teaspoons lime zest

2 tablespoons lime juice

1 teaspoon red chili paste

1/4 cup white onion diced

1 tablespoon fish sauce

Lime wedges

Directions:

  1. Add 1 tablespoon of olive oil to a large skillet. Add the chicken breasts to the pan and cook until browned on both sides, 4 to 5 minutes per side. Then remove the chicken from the pan and set it aside.

  2. Add the remaining tablespoon of olive oil to the pan along with the onion, ginger, and garlic. Lower heat to medium low and cook, stirring often, until the onion softens and is lightly browned, 5 minutes.

  3. Add the coconut milk, lime zest, chili paste, and fish sauce. Bring the sauce to a boil, and scrape the browned bits from the bottom of the pan

  4. Lower the heat and let the sauce simmer and add the chicken breast back to the pan. Cook for about 10 minutes or until the chicken is done in the center.

  5. When the chicken is done add the lime juice to the sauce and season to taste with salt. Sprinkle the chopped cilantro over the top and serve over cauliflower rice.

  6. Enjoy!
