The Keto RN Greek Chicken Bake

Ingredients:

4 large boneless, skinless chicken breasts

2 teaspoons olive oil

2 teaspoons Cavendars Greek seasoning (or whichever Greek seasoning you prefer)

2 Tablespoons capers

1/2 cup cherry tomato halves

1/2 cup chopped or sliced Kalamata Olives ( you can use black olives if you prefer)

1/2 cup sliced Greek peperoncini peppers

6 ounces crumbled feta cheese

3 cups of baby spinach

Instructions:

Preheat oven to 375°

  1. Rub chicken on both sides with Greek seasoning.

  2. Heat olive oil in frying pan over medium high heat, then add chicken breast and cook about two minutes on each side.

  3. Remove chicken from pan, let cool for a few minutes.

  4. While chicken is cooling, slice cherry tomatoes in half, and prepare your other ingredients.

  5. Slice chicken breasts into 1/4 inch slabs.

  6. Spray a 9“ x 12“ casserole dish with avocado oil cooking spray.

  7. Arrange chicken breasts in bottom of the casserole dish.

8. Sprinkle tomatoes, olives and

pepperoni over the chicken.

  1. Cover with spinach and feta cheese. Bake 25 minutes or until chicken is hot and cheese is starting to melt. Cover with foil after about 15 minutes so cheese doesn’t burn.

  2. Enjoy!
