The Keto RN “Fauxtato” Salad

Ingredients:

1 large cauliflower florets, chopped into small pieces

3 large hard boiled eggs, chopped

1 1/2 medium celery stalks, chopped

1/4 cup finely chopped dill pickles

1 tablespoon mustard

1 1/2 cups avocado oil mayonnaise

2 tablespoons fresh dill

Salt and pepper

Smoked paprika for garnish

Directions:

  1. Place cauliflower on a rimmed baking sheet lined with foil. Drizzle with olive oil and add salt.

  2. Roast cauliflower at 400° for 25 minutes, until very tender And lightly browned. Let cool.

  3. Add cauliflower, eggs, celery, pickles, mustard, mayonnaise to large serving bowl.

  4. Mix well, add fresh dill, salt and pepper and mix again.

  5. Garnish with more dill, egg, smoked paprika.

  6. Cover and refrigerate at least 4 hours.

  7. Enjoy!
