The Keto RN Chocolate Dipped Peanut Butter Cookies

Ingredients:

1 cup peanut butter

2/3 C granulated sweetener ( I used Swerve Brown Sugar)

1 egg

1/4 cup Lilly’s Chocolate chips

1 tsp. Coconut oil

Instructions:

  1. Preheat to 350°F. Line a large cookie sheet with parchment paper or a silicone mat.

  2. Combine the first 3 ingredients in a large mixing bowl and mix well.

  3. Form 12 balls of cookie dough and place on the lined pan. Press each cookie in a circular shape with two forks to make the classic peanut butter cookie imprint.

  4. Bake for 10-12 minutes.

  5. Remove from oven and let cool.

  6. Melt coconut oil and chocolate chips in a microwave safe bowl for 30 seconds. Remove and stir until smooth.

  7. Dip cookie in chocolate and put on cooling rack to set. Sprinkle with Coarse Sea Salt if desired.
