The Keto RN Macaroons with Chocolate Drizzle

Ingredients:

2 ½ cups of Unsweetened Desiccated Coconut

1 ½ cups of Coconut Milk, full fat

½ cup of Erythritol

⅓ cup of Coconut Flour

2 large Eggs

1 tablespoon butter melted

1 teaspoon of Vanilla

1/8 teaspoon salt

Chocolate Drizzle:

1/4 cup Lilly’s Chocolate chips

1 1/2 teaspoon coconut oil.

Melt in microwave, stirring every 20-30 seconds, until thin.

Scoop onto a spoon and drizzle over cookies.

Instructions:

  1. Preheat oven to 350F.

  2. Prepare a large cookie sheet by lining with parchment paper.

  3. Add all ingredients to a large mixing bowl. Mix well into a thick batter.

  4. Use a small cookie scoop to scoop the mixture onto your prepared cookie sheet.

  5. Bake for 15-20 minutes, until lightly browned.

  6. Leave to cool on the tray.

  7. Drizzle with melted chocolate if desired, or dip the bottom of cookie in chocolate.

  8. Put on parchment paper to set chocolate.

  9. Enjoy!
