The Keto RN Sour Cream Pecan Coffee Cake

Ingredients:

2 C Almond Flour

1/4 tsp. Salt

1/2 tsp. Baking Soda

11/2 tsp. Cinnamon

1/2 C Sour Cream or full fat Greek Yogurt ( I like Fage or Trader Joe’s)

1/2 C Sweetener ( I use Swerve)

2 droppers full of liquid Stevia

3 Eggs

1 tsp. Vanilla

Topping:

1/4 C Brown Swerve

11/2 tsp Cinnamon (or nutmeg, or half of each)

1/4 C Pecans

1T Melted Butter

Instructions:

  1. Preheat oven to 325° F

  2. Mix dry ingredients in a large bowl.

  3. Add wet ingredients and combine well

  4. Pour into a 9 x 11 glass baking pan.

  5. Add topping over batter

  6. Bake for 30 minutes, until toothpick comes out clean

  7. Enjoy!
