The Keto RN Dark Chocolate Espresso Brownies

The Keto RN Dark Chocolate Espresso Brownies:

Ingredients:

1/2 cup + 1 Tablespoon almond flour

2 Tbs cocoa powder

1 tsp baking powder

1/2 cup walnuts (optional)

1/3 cup unsweetened chocolate (I used Lilly’s dark chocolate chips)

1/4 cup coconut oil

1/4 cup unsalted butter

1/3 cup granulated erythritol

1-2 Tablespoons Espresso powder

2 eggs

Instructions:

Preheat oven to 350 degrees

Mix almond flour, cocoa powder, and baking powder into a small bowl and add nuts

Melt chocolate and coconut oil in microwave, then stir in butter

Whisk together erythritol and eggs

Fold the chocolate mixture into the dry ingredients and then add in egg mixture, stir

Pour batter into a parchment paper lined, 8x8 baking pan.

Bake 13 to 16 minutes (until toothpick comes out clean).

Cool in pan for 5 to 10 minutes.

Makes 16 brownies
