The Keto RN Zucchini and Mushrooms in Lemon Butter

Ingredients:

2 medium zucchini, chopped

8 Oz. Sliced white mushrooms

1 Tablespoon Olive Oil

2 Tablespoons Butter

2 cloves pf garlic, minced

1 Tablespoon lemon juice

1-3 teaspoons lemon zest

Salt and pepper to taste

Instructions:

In a 12 inch skillet, melt 1 tablespoon of butter and olive oil over medium -high heat.  Add mushrooms; cook about 7 minutes, stirring occasionally until browned.

Add zucchini.  Cook 3-5 minutes until lightly browned.  Add garlic; cook another minute or 2 longer.

Remove skillet form heat.  Stir in lemon juice and 1 Tablespoon of butter.  Season with salt and pepper as desired.  Sprinkle lemon zest over top, serve immediately.
