The Keto RN Cucumber Tomato Summer Salad

Ingredients:

2 English Cucumber, sliced

1 Cup Cherry tomatoes

1/4 cup Red onion, chopped

1 Tablespoon Oregano

1 teaspoon salt

1/2 teaspoon pepper

2 teaspoons Swerve, confectioner’s style

1/2 Cup Red Wine Vinegar

1/4 Cup Olive Oil

Instructions:

Add all ingredients to a bowl. Mix spices, oil and vinegar in well.

Refrigerate for a few hours prior to serving.

Enjoy!
