The Keto RN Low Carb Cornbread

Ingredients:

5 eggs

2 teaspoons monkfruit/erythritol blend sweetener

6 Tablespoons butter, melted and cooled slightly

1 1/2 Cups Almond Flour

1/4 Cup Corn Meal

2 teaspoons baking powder
1 Tablespoon water, if needed, to thin the batter

Instructions:

Preheat oven to 350 and line an 11 x 7 baking dish with parchment paper.

In a medium sized bowl, mix together the eggs and sweetener until blended.

Slowly add the melted, cooled butter to egg mixture.

Stir in Almond flour, cornmeal and baking powder.

Combine all ingredients well. If mixture is too thick, add 1 Tablespoon of water to thin it out a bit.

Pour batter into baking dish bake for 15- 20 minutes, until toothpick comes out clean and bread is golden.
