Warm Taco Slaw
Ingredients:
2 pounds ground beef ( 80/20 fat content)
1/4 cup Mexican seasoning blend (see recipe)
2 (10 Oz ) cans diced tomatoes and green chilies, undrained
2 (10 Oz) bags coleslaw mix
1 (4 Oz) can sliced black olives, drained
Optional toppings:
1/2 cup sour cream
Shredded cheddar cheese
Avocado
Pickled jalapeños
Cilantro
Directions:
In a large skillet, cook ground beef over medium heat until browned and cooked thoroughly. Drain some of the fat off after cooking.
Add 1/4 cup of Mexican seasoning to the cooked ground beef.
Add both cans of diced tomatoes, undrained, and mix well with ground beef and seasoning.
Add one bag of coleslaw and stir in until the cabbage wilts. Add the second bag to the pan as space allows. Heat until cabbage is wilted and warm.
Add olives
Heat thoroughly, serve in bowls.
Garnish with optional ingredients as desired.
Enjoy!
