Dairy-free Beef Tips in Mushroom Gravy

Ingredients:

2 pounds stir-fry beef

Salt and pepper

2 tablespoons avocado oil

2 tablespoons butter or ghee

1 small shallot, chopped

2 garlic cloves, minced

2 tablespoons Worcestershire sauce

8 ounces Cremini mushrooms, sliced

1 cup beef broth

1/4 cup almond milk

1/4 teaspoon xanthan gum

Directions:

Season Beef with salt and pepper.

Heat the oil in a large skillet over medium high heat. Add the beef and sear on both sides until browned.

Remove the beef from the skillet and set aside. Reduce the heat to medium low.

Add the butter, shallot, and garlic to the skillet and cook until fragrant.

Add the Worcestershire sauce and mushrooms to the skillet. Sauté until mushrooms have released their liquid and the liquid has evaporated.

Add beef broth to the pan to scrape up any bits that are stuck to the bottom of the pan.

Whisk the almond milk and xanthan gum together in a small bowl. Pour it into the pan and reduce heat to low and simmer covered about 10 minutes until the sauce starts to thicken.

Return the beef to the pan and continue to cook for an additional 5 to 10 minutes, covered, until the meat is tender.

Serve over cauliflower rice if desired.
