The Keto RN Instant Pot Mexican Chicken
Ingredients:
4 Chicken Breasts
1/2 Cup Chicken broth or water
1 can tomatoes with peppers
1 can chopped green chiles
3 1/2 T Taco Seasoning (see recipe below)
Taco Seasoning:
1 1/2 Tablespoons Chili Powder
1 tablespoon ground cumin
1 1/2 teaspoon celery salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
1/4-1/2 teaspoon red pepper flakes (depending on how spicy you want it)
Instructions:
Mix Taco Seasoning ingredients together in a small bowl. Take out 3-4 Tablespoons and set aside. Store the remainder of spices in a jar for later use.
Put chicken breasts into Instant Pot.
Add broth, seasoning, tomatoes and green chiles to pot.
Do not stir.
Place lid on Instant Pot. Close vent to Sealing. Set to 15 minutes Manual time.
Once done, allow 5 minutes Natural release.
Remove chicken and place onto cutting board.
Shred with 2 forks.
Put chicken back into Instant Pot and mix well with the remaining juices,
Pour into serving dish and serve for tacos or taco salad.
