The Keto RN Mediterranean Sheet Pan Chicken

Ingredients:

3 pounds bone-in, skin-on chicken thighs

2T Olive Oil

1 teaspoon salt

Fresh pepper (as much as you like)

2T Garlic Powder 

2T Smoked Paprika 

2T Oregano 

For the vegetables:

3 Roma tomatoes, cut in quarters 

1 small eggplant, chopped into chunks 

6 garlic cloves, peeled 

3 small shallots, sliced 

2T Olive oil

1 T Garlic Powder 

1T Oregano 

1 tsp salt

1 tsp pepper 

1 block of feta cheese (8 Oz), sliced

Handful of black or Kalamata olives, pitted 

Instructions:

Preheat oven to 400F

Start by mixing olive oil and spices for the chicken in a bowl and pour over chicken. Rub into chicken and set aside and let flavors blend.

Next, chop vegetables and put into a bowl. Add spices and oil and mix well.

Cover large baking sheet with parchment paper and add chicken to it.

Pour vegetables over chicken and arrange everything on the sheet pan so it all fits.

Add feta and olives to the top.

Bake for 35-40 minutes, until chicken reaches 165F.
