The Keto RN Mediterranean Herbed Fish with Wilted Kale and Veggies

1/3 C Extra-virgin olive oil

1/2 sweet large onion, sliced

2 cups of sliced Cremini mushrooms

3 garlic cloves, peeled and sliced

4 cups chopped kale

1 medium Roma tomato, sliced

2 tablespoons Mediterranean spice mix

1 tablespoon fresh squeezed lemon juice

1/2 teaspoon salt

1/2 teaspoon pepper

4-6oz fillets of white fish of your choice.

Herb Mix

2T. Oregano

2T. Thyme

2T. Rosemary

1T. Sage

Mix well, store in a jar

1. Heat 3 tablespoons oil in a large saucepan pan over medium. Add onion; cook,stirring occasionally, until translucent, 3 to 4 minutes. Add mushrooms and garlic;

cook, stirring occasionally, until mushrooms release their liquid and begin to brown, 4 to 6 minutes.

Add kale, tomato,and 1 tablespoon herb mix.

Cook, stirring occasionally, until kale is wilted and mushrooms are tender, 5 to 7 minutes.

Stir in lemon juice and ¼ teaspoon each salt and pepper.

Remove from heat, cover, and keep warm.

2. Sprinkle fish with 1 tablespoon herb mix and ¼ teaspoon each salt and pepper.

Heat remaining 1/4 cup oil in a large

nonstick skillet over medium-high. Add fish and cook until flesh is opaque, 2 to 4 minutes per side.

To serve, place vegetable mixture on plates and top with fish.

3. Serve and Enjoy!
