The Keto RN Malibu Chicken

The Keto RN Malibu Chicken (GF)

This can be dairy-free too by omitting Swiss Cheese

Ingredients:

4 chicken breasts

Salt and pepper

Malibu dipping sauce:

1/2 cup mayonnaise

3 tablespoons Dijon mustard

1 tablespoon powdered keto sweetener

Crumb topping:

3/4 cup crushed pork rinds

2 teaspoons granulated garlic

1 teaspoon granulated onion

1/4 teaspoon salt

1/4 teaspoon pepper

Toppings:

8 pieces of thinly sliced deli ham

4 slices Swiss cheese

1 small can of pineapple rings (optional)

Instructions:

  1. Preheat oven to 350°. Finely crush pork rinds in a food processor or place them in a large plastic bag and smash them with a rolling pin or mallet. And add 1/4 cup of pork rinds to the bottom of a 9 x 13 baking dish.

  2. Pat chicken dry and put on a plate. Season with salt and pepper.

  3. Mix the mayonnaise, mustard and sweetener in a bowl.

  4. Add 1/4 cup of mustard mixture to a shallow dish, reserving the rest as dipping sauce.

  5. Add seasoning to crushed pork rinds and place in a shallow dish.

  6. Roll the chicken into the mayonnaise mixture to lightly coat each piece, then roll into the pork rinds, and place in 9 X 13 baking dish.

  7. Add a slice of deli ham, a ring of pineapple, and Swiss cheese slice to each piece of chicken.

  8. Bake for 30 to 40 minutes, or until chicken is cooked through

  9. Enjoy!
