The Keto RN Lasagna
Ingredients: For the “Noodles”
4 Oz. Cream Cheese, softened
2 large eggs
1/4 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1-1/4 cups shredded part-skim mozzarella cheese
For the filling:
1 pound ground beef
1 Tablespoon dried minced onion
1.5 teaspoons basil
1.5 teaspoons oregano
1.5 teaspoons garlic powder
1.5 cups low carb jarred or homemade marinara sauce (I use Rao’s)
1 cup shredded part-skim mozzarella
6 tablespoons full fat ricotta cheese (or cottage cheese)
Instructions: for “noodle”
Preheat oven to 375 degrees. Line a 13 X 9 inch baking dish with parchment paper.
In a large bowl, use a hand mixer to combine cream cheese and eggs.
Add Parmesan cheese, Italian seasoning, garlic powder and onion powder to the bowl. Stir to combine well.
Fold in the mozzarella cheese gently until well combined with other ingredients. Spread the mixture in the baking dish, making an even layer.
Bake for 20-25 minutes, until golden brown and firm.
After baking, place in the refrigerator to cool. After about 20 minutes, cut the noodles crosswise into thirds. These will fit nicely into an 8.5 X 4.5 loaf pan.
Instructions for filling:
Add ground beef and all the spices to a large skillet. Cook until meat is browned.
Drain grease from the beef and add 1 cup of Marinara sauce to the meat. Reduce the heat to low and simmer for 10 minutes.
To assemble:
Pour 1/4 cup of marinara sauce into an 8.5 X 4.5 inch loaf pan and place first noodle layer on top of the sauce.
On top of the noodle,, layer 1/3 of the meat sauce. Top with 1/4 cup mozzarella cheese and 3 tablespoons of ricotta cheese. Cover with the second noodle and repeat this sequence.
Cover with 3rd noodle layer and remaining meat sauce, remaining 1/2 cup of jarred sauce and remaining 1/4 cup of mozzarella cheese. Sprinkle with Italian seasoning,
Bake for 20 minutes, until cheese on top is bubbling. Let lasagna rest for about 10 minutes, then serve!
