The Keto RN Ground Beef Stroganoff

Ingredients:

2 Tablespoons butter

1 pound 80% lean ground beef

Salt and Pepper to taste

16 Oz. Sliced White Mushrooms

2 garlic cloves, minced

1 Cup Beef broth

4 Oz. Dairy Free Cream Cheese (I used Kite Hill brand) Use regular if not dairy free!

1/2 Cup Plain Cashew Milk Yogurt OR use Sour Cream if not Dairy Free!

1 Tablespoon Worchestershire sauce

1 Tablespoon Dijon Mustard

1 teaspoon Paprika

Parsley for garnish

Cauliflower rice

Instructions:

Brown ground beef in a large skillet. Add salt and pepper to taste. Cook thoroughly, remove from pan and set aside.

Melt butter in same skillet over medium high heat and add mushrooms. Cook, stirring occasionally until they are golden brown. Add Garlic and cook 1 minute. Add broth, cream cheese, sour cream, Worcestershire, Dijon and Paprika to skillet. Bring to a simmer, stirring to melt cream cheese.

Return beef to skillet and mix well to combine.

Serve over Cauliflower Rice and garnish with parsley.
