The Keto RN Instant Pot Chicken Coq Au Vin

Ingredients:

3 pieces chopped bacon

1 white onion, chopped

4 garlic cloves, minced

2 Tablespoons Tomato Paste

1-1/2 Cups Red Wine

1 Cup Chicken broth

1.5 pounds Chicken thighs or breasts (skinless, boneless)

2 Bay leaves

1 tablespoon thyme

2 cups Cremini mushrooms

1/2 teaspoon salt (more to taste)

1/4 teaspoon black pepper

Parsley for garnish if desired

Instructions:

Turn Instant Pot to sauté mode and sauté chopped bacon until done.

Remove bacon with slotted spoon and placed on a paper towel.

Add chopped onion, garlic, and tomato paste to Instant Pot and sauté for 5minutes.

Turn Instant Pot off and add red wine and chicken broth.

Add chicken,bay leaves, thyme, mushrooms, salt and pepper to Instant Pot.

Set Instant Pot to manual pressure and cook on high for 8 minutes.

Allow Instant Pot to release naturally for 4 minutes, then quick release.

Set Instant Pot to sauté and bring to a boil for 5 minutes.

Serve this over mashed cauliflower or potato, top with bacon and parsley.
