The Keto RN Balsamic Chicken with Mushrooms and Goat Cheese 

Ingredients:

2 pounds of chicken breast tenders

1/3 cup balsamic vinegar

1/3 cup, coconut aminos, tamari sauce, or soy sauce.

8 ounces sliced white mushrooms.

4 ounces goat cheese crumbles

Fresh basil

Instructions:

Heat two tablespoons oil in a large skillet over medium high heat.

Brown chicken on both sides and cook until almost done.

Add balsamic vinegar, coconut aminos, and mushrooms to the pan.

Cover with a lid until mushrooms are soft.

Remove from heat, sprinkle with goat cheese and fresh, sliced basil.

Cover for a few more minutes over low heat until the cheese melts.

Serve with your favorite low carb side dish and enjoy!
