The Keto RN Alfredo Chicken with Broccoli and Tomatoes

Ingredients:

2 pounds chicken breast tenders

11/2 teaspoons salt

3/4 teaspoon pepper

1 tablespoon garlic powder

2 tablespoons avocado oil

1 pound broccoli florettes

1 1/2 cups grape tomatoes

1/2 cup chicken broth

1-15 ounce jar Rao’s Alfredo

1/4 cup shredded mozzarella or Parmesan

Instructions:

  1. Slice chicken tenders into 2 inch pieces. Add the chicken to a mixing bowl and add garlic powder, salt and pepper. Stir until well coated.

  2. Heat a large skillet over medium high heat. Add 2 tablespoons avocado oil and the chicken. Let the chicken sear for about three minutes, no stirring, until it is golden brown. Then flip chicken and sear on the other side.

  3. Remove chicken from the pan and set it aside. Then placed the pan back over high heat and add in the chicken broth, stirring and scraping the bottom of the pan to remove any of the chicken and spices. Next, add broccoli and tomatoes( or whatever vegetables you like).Cover the pot with a lid and let the vegetable seem for about two minutes or until the broccoli is just tender and bright green.

  4. Turn off burner and stir in the chicken and the Alfredo, Stirring to evenly coat the vegetables and meat. Top with shredded cheese as desired.

  5. Enjoy!
