The Keto RN Greek Inspired Egg Bites

Ingredients :

2 tablespoons olive oil

1/2 onion, diced

1/4 teaspoon salt

1 red bell pepper, diced

2 teaspoons dried oregano.

8 large eggs

3 ounces crumbled feta cheese

1/2 cup half-and-half.

1/2 teaspoon black pepper

2 cups fresh spinach, chopped

1/4 cup of sliced Kalamata olives

Instructions:

Preheat oven to 325°F. Generously coat a 12 cup muffin pan with cooking spray.

Heat oil and a large skillet over medium heat. Add onion and 1/4 teaspoon salt; cook, stirring frequently, until onions start to soften. Add bell pepper, and oregano; cook until vegetables are tender, stirring often. Remove from heat and let cool.

Whisk eggs, feta cheese, half-and-half and pepper in a large bowl. Stir in spinach, olives, and vegetable mixture. Spoon mixture evenly into prepared muffin cups.

Bake at 325° until firm to the touch, about 25 minutes. Let’s stand in pan five minutes before removing from pan.
